  • 1 pound chicken breast (cut into small chunks)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 1/2 onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 1/2 cups broccoli florets (cut into small pieces)
  • 1 cup orzo
  • 3 cups chicken stock
  • 1 1/2 cups cheese (1/2 cup parmesan and 1 cup cheddar)
  • 1 tablespoon fresh lemon juice
  • Fresh herbs (such as basil, oregano, or parsley)

Instructions

  1. In a large pot or Dutch oven, heat the cooking oil over medium heat.
  2. Add chicken chunks seasoned with salt and pepper; cook until browned (about 5-7 minutes).
  3. Sauté butter, onion, and garlic until the onion is translucent.
  4. Stir in broccoli florets and orzo; mix well.
  5. Pour in chicken stock; bring to a boil then reduce heat. Cover and simmer for about 15 minutes until the orzo is cooked.
  6. Remove from heat, stir in cheese until melted; add lemon juice.
  7. Serve hot garnished with fresh herbs.
