- 1 1/2 cups broccoli florets (cut into small pieces)
- 1 cup orzo
- 3 cups chicken stock
- 1 1/2 cups cheese (1/2 cup parmesan and 1 cup cheddar)
- 1 tablespoon fresh lemon juice
- Fresh herbs (such as basil, oregano, or parsley)
Instructions
- In a large pot or Dutch oven, heat the cooking oil over medium heat.
- Add chicken chunks seasoned with salt and pepper; cook until browned (about 5-7 minutes).
- Sauté butter, onion, and garlic until the onion is translucent.
- Stir in broccoli florets and orzo; mix well.
- Pour in chicken stock; bring to a boil then reduce heat. Cover and simmer for about 15 minutes until the orzo is cooked.
- Remove from heat, stir in cheese until melted; add lemon juice.
- Serve hot garnished with fresh herbs.
