Ingredients
- 2 medium zucchini
- 1 large sweet onion
- 1 large red bell pepper
- 1/2 cup Italian salad dressing
- Salt and fresh ground black pepper
- Fresh parsley for garnish
Instructions
- Cut zucchini in half lengthwise and slice into pieces about 2 inches thick.
- Peel onion, halve it, and break apart individual layers into similar-sized pieces.
- Halve the bell pepper, remove seeds and stem, then cut into pieces matching the size of the other vegetables.
- Place cut veggies in a Ziploc bag, add Italian dressing to coat well, and optional dried herbs. Marinate in the fridge for 4-6 hours.
- Preheat grill pan over medium-high heat. Drain excess dressing from marinated vegetables.
- Grill veggies in the pan for 15-20 minutes, stirring every 5 minutes until tender with charred edges.
