  • 2 tablespoons gluten-free all-purpose flour
  • 2 tablespoons olive oil
  • ½ yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1 large carrot (cut into 2-inch chunks)
  • 2 Yukon Gold potatoes (diced)
  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • Fresh thyme leaves (for garnish)

Instructions

  1. Preheat your oven to 325°F.
  2. Season the beef with salt, pepper, and flour, coating evenly.
  3. In a Dutch oven, heat olive oil over medium heat. Brown the beef on all sides; set aside.
  4. Sauté onion, garlic, and carrot in the same pot for about 3 minutes until lightly browned.
  5. Add potatoes, broth, tomato paste, Worcestershire sauce, bay leaf, and browned beef back to the pot.
  6. Bring to a simmer, cover, and transfer to the oven.
  7. Cook for 2 to 2.5 hours until the beef is tender. Remove bay leaf before serving.
