Ingredients
- 1 cup fine bulgur
- 2 cups boiling water
- 3 cups curly parsley (minced)
- 3/4 cup green onion (chopped)
- 1/4 cup fresh mint (minced)
- 1 1/2 cups roma tomatoes (diced)
- 1/2 cup extra virgin olive oil
- 1/2 cup lemon juice
- 1 1/2 teaspoon kosher salt
Instructions
- Soak bulgur wheat in a large bowl by pouring boiling water over it. Let sit for at least 30 minutes until tender.
- While the bulgur soaks, chop parsley, mint, and green onions; place in a separate bowl.
- In another bowl, whisk together olive oil, lemon juice, and salt until well combined.
- Drain soaked bulgur using a colander lined with cloth to remove excess water.
- Combine drained bulgur with chopped veggies and herbs in a large bowl. Pour dressing over the mixture and mix well.
