  • 70 g egg whites (at room temperature)
  • 75 g fine granulated sugar
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon coarse kosher salt
  • Gel food coloring (if desired)
  • For the filling: 2 large egg yolks
  • ¼ cup granulated sugar
  • 3 ½ tablespoons milk
  • ½ cup unsalted butter (softened)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 150°C (300°F) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl; set aside.
  3. In a stand mixer, whip egg whites until frothy. Gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold in the dry mixture until combined. Add food coloring if desired.
  5. Pipe equal-sized circles onto prepared sheets and let rest for about 30 minutes.
  6. Bake for approximately 18 minutes until firm but not browned.
  7. For the filling, beat egg yolks and sugar until light, mix in milk and butter until smooth, then add vanilla.
  8. Once macaron shells are cooled, pair them up and fill each with the prepared filling.
