- 6 oz cheddar cheese (cubed)

- 4 celery stalks (diced)
- 1 red bell pepper (diced)
- 1 cup frozen peas
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1/4 cup fresh dill
- 2 tablespoons sugar
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Cook 1 lb of elbow macaroni in boiling water until al dente. Drain and rinse under cold water.
- In a large bowl, combine the cooled pasta with 6 oz of cubed cheddar cheese, 1/2 minced red onion, 4 diced celery stalks, 1 diced red bell pepper, and 1 cup of frozen peas.
- In another bowl, whisk together 1/2 cup mayonnaise, 1/4 cup apple cider vinegar, 1/4 cup fresh dill, 2 tablespoons sugar, 2 tablespoons Dijon mustard, 1 teaspoon salt, and 1 teaspoon pepper.
- Pour the dressing over the pasta mixture and stir until everything is coated. Chill for at least one hour before serving.
