- 1–1/4 cups granulated sugar
- 1 cup canned pumpkin puree
- 1 tsp vanilla extract
- 8 oz cream cheese, at room temperature
- 1/4 cup salted butter, softened
- 1 tsp vanilla extract
- 1/8 tsp ground cinnamon
- Pinch sea salt
- 3 cups powdered sugar
- 1/4 cup powdered sugar, for dusting towel
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
- In another bowl, beat eggs and sugar until fluffy. Mix in pumpkin puree and vanilla.
- Fold in dry ingredients until just combined.
- Pour batter onto prepared baking sheet, spreading evenly. Bake for about 15 minutes until a toothpick comes out clean.
- Dust a clean kitchen towel with powdered sugar and invert the cake onto it. Roll up tightly and let cool completely.
- For frosting, beat cream cheese and butter until smooth, then add vanilla, cinnamon, and powdered sugar until creamy.
- Once cooled, unroll the cake gently and spread frosting evenly before re-rolling without the towel.
