Ingredients

  • 5 ears of corn
  • 4 Tbsp extra-virgin olive oil
  • 3 Tbsp rice vinegar
  • 2 Tbsp mayonnaise
  • 1 grated garlic clove
  • 1 small shallot
  • 2 medium ripe avocados
  • 1 jalapeño
  • Fresh basil and mint leaves
  • Roasted pumpkin seeds
  • Cotija cheese

Instructions

  1. Char the corn in a cast-iron skillet with olive oil until lightly charred. Set aside to cool.
  2. In a bowl, whisk together remaining olive oil, rice vinegar, mayonnaise, garlic, sumac (or paprika), salt, and pepper. Stir in shallots.
  3. Cut kernels from the charred corn and combine with raw corn, diced avocado, jalapeño, chopped herbs, pumpkin seeds, Cotija cheese, salt, and pepper in a mixing bowl.
  4. Pour dressing over the mixture and gently toss to combine before serving.
