  • 240g cream cheese
  • 225g cold butter
  • 1 egg yolk
  • 260g flour
  • 70g powdered sugar
  • 40g cocoa powder
  • pinch of salt
  • 1L milk
  • 3 large eggs
  • 100g cornstarch
  • 150g brown sugar
  • 100g butter
  • 170g heavy cream
  • 200g praliné paste
  • 200g roasted hazelnuts
  • 100g brown sugar
  • 20g water
  • 50g milk chocolate
  • 50g heavy cream

Instructions

  1. Prepare the crust by mixing flour, cocoa powder, sugar, salt, cream cheese, and butter until smooth. Add egg yolk and refrigerate for 30 minutes.
  2. Preheat oven to 180°C (350°F). Roll out the dough into a tart pan and bake for about 35 minutes.
  3. For the filling, whisk eggs with sugar and cornstarch. Heat milk and gradually add it to the egg mixture while whisking.
  4. Return mixture to heat until thickened; then mix in butter, cream, and praliné paste until smooth.
  5. Bake the flan in the crust for about 45 minutes or until set. Cool completely at room temperature.
  6. Make caramelized hazelnuts by heating sugar and water until caramelized; coat hazelnuts and cool on parchment paper.
  7. Create ganache by heating cream and mixing in chocolate until smooth.
  8. Pour ganache over cooled flan and top with caramelized hazelnuts before chilling.
