- 14 oz firm tofu, drained and pressed
- 2 tbsp olive oil
- 1 cup bell peppers, sliced
- 1/2 cup red onion, sliced
- 1 cup corn, frozen or fresh
- 1 can (15 oz) black beans, rinsed
- 1 cup cooked rice or quinoa
- 2 tbsp lime juice
- 1/4 cup cilantro, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the tofu into bite-sized cubes and toss with olive oil, cumin, chili powder, salt, and pepper until well-coated.
- Spread the seasoned tofu on the baking sheet and bake for 25-30 minutes until golden brown, flipping halfway through.
- While the tofu bakes, sauté bell peppers and red onion in olive oil over medium heat for about five minutes until tender.
- Assemble your bowl starting with a base of rice or quinoa, then layer on baked tofu, sautéed veggies, black beans, corn, and drizzle with lime juice. Garnish with chopped cilantro.
