  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 lb mushrooms, quartered
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping vegetables and cutting beef into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat. Season beef with salt and pepper; brown in batches until well-seared on all sides. Remove beef from the pot.
  3. In the same pot, add onion, carrots, and garlic; cook until onions are translucent.
  4. Sprinkle flour over vegetables and stir well to coat while scraping any flavorful bits from the bottom.
  5. Return browned beef to the pot along with tomato paste and broth; add bouquet garni. Bring to a boil, then reduce heat to simmer.
  6. Cover and let cook gently for about 2 hours, stirring occasionally.
  7. In the last 30 minutes of cooking, sauté mushrooms in a separate pan until golden brown; add to stew before serving.
