Ingredients
- 1 ½ lbs chuck steak, cubed
- 5 large onions, sliced
- 4 garlic cloves, minced
- 2½ cups beef broth
- 1 tbsp Dijon mustard
- 1 ½ cups Gruyere cheese, grated
- Olive oil, as needed
- Fresh thyme
Instructions
- Cube the chuck steak and slice the onions thinly. Mince the garlic.
- In a Dutch oven, heat olive oil over medium-high heat and brown the beef seasoned with salt and pepper.
- Remove beef and caramelize onions with butter over low heat for about 30 minutes.
- Add garlic and cook for an additional minute; then mix in Worcestershire sauce, Dijon mustard, flour, and half of the broth.
- Return beef to pot along with remaining broth, bay leaves, thyme, salt, and pepper; simmer for one hour.
- Preheat broiler; brush baguette slices with olive oil and place them on top of stew.
- Top with Gruyere and Parmesan cheese; broil until bubbly and golden.
