  • 1 ½ lbs chuck steak, cubed
  • 5 large onions, sliced
  • 4 garlic cloves, minced
  • 2½ cups beef broth
  • 1 tbsp Dijon mustard
  • 1 ½ cups Gruyere cheese, grated
  • Olive oil, as needed
  • Fresh thyme

Instructions

  1. Cube the chuck steak and slice the onions thinly. Mince the garlic.
  2. In a Dutch oven, heat olive oil over medium-high heat and brown the beef seasoned with salt and pepper.
  3. Remove beef and caramelize onions with butter over low heat for about 30 minutes.
  4. Add garlic and cook for an additional minute; then mix in Worcestershire sauce, Dijon mustard, flour, and half of the broth.
  5. Return beef to pot along with remaining broth, bay leaves, thyme, salt, and pepper; simmer for one hour.
  6. Preheat broiler; brush baguette slices with olive oil and place them on top of stew.
  7. Top with Gruyere and Parmesan cheese; broil until bubbly and golden.
