Ingredients
- 12 large hardboiled eggs
- 2 tablespoons mayonnaise
- 1 ½ tablespoons sweet pickle relish
- 2 teaspoons Dijon mustard
- 1 ½ cups all-purpose flour
- 2 large eggs (beaten)
- 1 ½ cups panko breadcrumbs
- 1 cup finely crushed butter crackers
- Oil for frying
Instructions
- Prepare the egg yolks by scooping them into a mixing bowl; add mayonnaise, relish, mustard, salt, and pepper. Mash until smooth.
