  • 200g shrimp, peeled & deveined
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tsp paprika
  • 1 cup white rice (jasmine)
  • 2 cups water
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup diced carrots

Instructions

  1. Rinse the rice under cold water until the water runs clear. In a saucepan, bring 2 cups of water to a boil, add the rice and a pinch of salt, reduce heat, cover, and simmer for about 15 minutes until fluffy.
  2. Steam the broccoli, cauliflower, and carrots for about 5-6 minutes until tender-crisp. Toss with olive oil or butter, salt, and pepper.
  3. In a skillet over medium-high heat, melt butter and sauté minced garlic until fragrant. Add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until pink.
  4. Serve by arranging rice, shrimp, and vegetables on plates while hot.
