  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper to taste
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine chicken drumsticks with olive oil, garlic, thyme, oregano, paprika, salt, and pepper.
  3. In another bowl, toss the cubed potatoes, carrots, and red bell pepper with olive oil, salt, and pepper.
  4. Spread the seasoned vegetables on a baking tray and nestle the marinated chicken among them.
  5. Roast everything in the preheated oven for about 40-45 minutes or until chicken is cooked through and veggies are tender.
  6. Garnish with fresh parsley before serving.
