Description

Garlic Shrimp Crostini with Avocado is a delightful appetizer that combines smoky, perfectly seasoned shrimp with rich, creamy avocado on crispy crostini.


Ingredients

  • 1012 baguette slices (about ½” thick)
  • 6 tbsp olive oil, divided
  • 1 teaspoon garlic powder
  • 1 avocado
  • Juice of ½ lime
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 large shrimp, peeled and deveined
  • 2 big garlic cloves, cut into slivers
  • ¾ teaspoon smoked paprika
  • ½ teaspoon cumin

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper. Slice baguette into ½ inch thick pieces and arrange on the baking sheet.
  2. Mix 3 tablespoons of olive oil with garlic powder in a bowl and brush over both sides of baguette slices. Bake for 10-15 minutes until golden brown.
  3. Meanwhile, mash avocado in a bowl, mix in lime juice, salt, and pepper.
  4. Heat remaining olive oil in a skillet over low heat and sauté garlic slivers until fragrant (about 2 minutes). Increase heat to medium-high, add shrimp, smoked paprika, cumin, salt, and pepper; cook until shrimp are pink and opaque (3-5 minutes).
  5. Spread avocado mixture on crostini and top with shrimp before serving warm.
