Garlic Shrimp Crostini with Avocado is a delightful appetizer that combines smoky, perfectly seasoned shrimp with rich, creamy avocado on crispy crostini.

- 10–12 baguette slices (about ½” thick)
- 6 tbsp olive oil, divided
- 1 teaspoon garlic powder
- 1 avocado
- Juice of ½ lime
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 12 large shrimp, peeled and deveined
- 2 big garlic cloves, cut into slivers
- ¾ teaspoon smoked paprika
- ½ teaspoon cumin
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper. Slice baguette into ½ inch thick pieces and arrange on the baking sheet.
- Mix 3 tablespoons of olive oil with garlic powder in a bowl and brush over both sides of baguette slices. Bake for 10-15 minutes until golden brown.
- Meanwhile, mash avocado in a bowl, mix in lime juice, salt, and pepper.
- Heat remaining olive oil in a skillet over low heat and sauté garlic slivers until fragrant (about 2 minutes). Increase heat to medium-high, add shrimp, smoked paprika, cumin, salt, and pepper; cook until shrimp are pink and opaque (3-5 minutes).
- Spread avocado mixture on crostini and top with shrimp before serving warm.
