  • 1 pound potatoes, peeled and diced
  • 3 to 4 cups vegetable stock
  • 1/4 cup sour cream
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, cook the Turkey Turkey Bacon over medium-high heat until crispy. Remove and set aside.
  2. Sauté the chopped onion in the Turkey bacon drippings until softened.
  3. Add green beans, potatoes, seasonings, and stock; stir well.
  4. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  5. Puree about one-third of the soup using an immersion blender; mix in sour cream.
  6. Combine pureed soup with remaining mixture; adjust seasoning and reheat gently.
  7. Serve hot, garnished with parsley or additional Turkey Turkey Bacon bits if desired.
