Ingredients

Scale
  • 1 cup unsalted butter (frozen)
  • 2 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon fine sea salt
  • 1 teaspoon vanilla paste
  • 710 tablespoons ice water
  • 2 1/2 cups frozen blueberries
  • 1/4 cup brown sugar (packed)
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Prepare your baking pan by lining an 8×8 inch metal pan with parchment paper.
  2. In a bowl, mix flour, sugar, and salt; then incorporate grated frozen butter until crumbly.
  3. Add vanilla and ice water until the dough clumps together. Chill half for the bottom crust and press the other half into the lined pan.
  4. Bake the bottom crust at 375°F for about 25-35 minutes until golden brown.
  5. For the filling, combine blueberries, brown sugar, and lemon juice in a pot; thicken with cornstarch mixture.
  6. Roll out remaining dough to create lattice strips; weave them over the blueberry filling after it cools slightly.
  7. Brush with egg wash, sprinkle turbinado sugar, and bake again for an additional 25-30 minutes until golden.
