- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 2 cups mashed cooked sweet potatoes (about 2 medium)
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup whole milk
- 1/2 cup unsalted butter (for glaze)
- 1 cup granulated sugar (for glaze)
- 1/4 cup water (for glaze)
- 1 tsp vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a Bundt pan or a 9×13-inch baking dish.
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Blend in vanilla extract.
- Mix in the mashed sweet potatoes until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to the wet mixture alternately with milk until just combined.
- Pour batter into prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
