  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups mashed cooked sweet potatoes (about 2 medium)
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter (for glaze)
  • 1 cup granulated sugar (for glaze)
  • 1/4 cup water (for glaze)
  • 1 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a Bundt pan or a 9×13-inch baking dish.
  2. In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Blend in vanilla extract.
  4. Mix in the mashed sweet potatoes until smooth.
  5. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually add dry ingredients to the wet mixture alternately with milk until just combined.
  7. Pour batter into prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
  8. For the glaze, melt butter with sugar and water in a saucepan; bring to a boil then simmer for a few minutes before adding vanilla extract.
  9. Poke holes in the warm cake and pour the glaze over it.
  10. Allow to cool before serving.
