Instructions

  2. Cook rice according to package instructions and let cool slightly.
  3. In a mixing bowl, combine Greek yogurt with fresh herbs and lemon juice; mix until smooth.
  4. Prepare vegetables: slice cucumber, halve cherry tomatoes, thinly slice red onion, and tear lettuce into pieces.
  5. Assemble the bowl by placing rice at the bottom, layering with sliced chicken and vegetables. Top with herb yogurt sauce.
