- 1 chicken breast, cut into chunks
- 1 cup sweet potatoes, peeled & cubed
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper to taste
- Optional: chili flakes, lemon juice
Instructions
- Preheat your oven to 400°F (200°C). In a mixing bowl, coat sweet potato cubes with half of the olive oil, smoked paprika, salt, and black pepper. Spread evenly on a baking tray and roast for 20-25 minutes until golden brown and tender.
- Season the chicken chunks with garlic powder, onion powder, salt, and black pepper. Heat a grill pan or skillet over medium heat with a small amount of oil. Grill the chicken pieces for about 6-8 minutes until charred and fully cooked.
- In another pan, heat the remaining olive oil over medium heat. Sauté broccoli florets for about 5-6 minutes until bright green and slightly tender. Season with salt, black pepper, and optional chili flakes.
- Assemble your plate by arranging the grilled chicken alongside roasted sweet potatoes and sautéed broccoli. Drizzle with lemon juice if desired.
