  • 2/3 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1 tablespoon dried parsley
  • 1 tablespoon dried shallots or onion
  • 1 tablespoon Spike seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon coarse ground black pepper

Instructions

  1. Prepare the marinade by mixing balsamic vinegar, Dijon mustard, olive oil, and spices in a bowl.
  2. Trim chicken breasts and make small slits across each piece for even marination.
  3. Place chicken in a Ziploc bag and pour the marinade over it. Refrigerate for 4–6 hours.
  4. Preheat your grill to medium-high heat and oil the grates.
  5. Grill chicken for about 6–8 minutes per side until fully cooked and firm to the touch.
  6. Let the grilled chicken rest for a few minutes before slicing and serving.
