Ingredients
- 3 pounds flank steak
- 1/3 cup fresh lime juice
- 1/4 cup olive oil
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tbsp. soy sauce
- 1/2 tsp. ground chipotle chili powder
- 2 tsp. lime zest (optional)
Instructions
- Prepare the marinade by mixing lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, chipotle powder, and lime zest in a bowl.
- Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or up to 24 hours.
- About 30 minutes before grilling, take the steak out of the refrigerator to bring it to room temperature.
- Preheat your grill to medium-high heat and oil the grates.
- Grill the flank steak for 4-5 minutes per side for medium-rare or 6 minutes per side for medium doneness.
- Use a meat thermometer to check internal temperature: aim for 140-145°F for medium-rare.
- Allow the steak to rest for 5 minutes before slicing against the grain into thin strips.
