  • 3 pounds flank steak
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tbsp. soy sauce
  • 1/2 tsp. ground chipotle chili powder
  • 2 tsp. lime zest (optional)

Instructions

  1. Prepare the marinade by mixing lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, chipotle powder, and lime zest in a bowl.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or up to 24 hours.
  3. About 30 minutes before grilling, take the steak out of the refrigerator to bring it to room temperature.
  4. Preheat your grill to medium-high heat and oil the grates.
  5. Grill the flank steak for 4-5 minutes per side for medium-rare or 6 minutes per side for medium doneness.
  6. Use a meat thermometer to check internal temperature: aim for 140-145°F for medium-rare.
  7. Allow the steak to rest for 5 minutes before slicing against the grain into thin strips.
