Ingredients

  • 4 (8 oz) portions of Mahi Mahi
  • ½ cup butter
  • ½ teaspoon minced garlic
  • ½ fresh pineapple
  • 1 medium red bell pepper
  • ½ medium red onion
  • ½ bunch cilantro
  • 1 medium serrano pepper
  • 2 tablespoons lemon juice
  • ¼ cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Grill pineapple slices until marked, then chop.
  2. In a bowl, mix diced red bell pepper, onion, cilantro, serrano pepper, lemon juice, olive oil, salt, and pepper. Add chopped grilled pineapple and toss well.
  3. Pat dry Mahi Mahi fillets and season with salt and pepper.
  4. Preheat grill to medium-high; melt butter with garlic and brush on fillets.
  5. Grill each side for about 4-5 minutes until cooked through.
  6. Serve the grilled fish topped with pineapple salsa.
