Ingredients
- 4 (8 oz) portions of Mahi Mahi
- ½ cup butter
- ½ teaspoon minced garlic
- ½ fresh pineapple
- 1 medium red bell pepper
- ½ medium red onion
- ½ bunch cilantro
- 1 medium serrano pepper
- 2 tablespoons lemon juice
- ¼ cup extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Grill pineapple slices until marked, then chop.
- In a bowl, mix diced red bell pepper, onion, cilantro, serrano pepper, lemon juice, olive oil, salt, and pepper. Add chopped grilled pineapple and toss well.
- Pat dry Mahi Mahi fillets and season with salt and pepper.
- Preheat grill to medium-high; melt butter with garlic and brush on fillets.
- Grill each side for about 4-5 minutes until cooked through.
