  • 1/8 red onion (peeled and finely sliced)
  • 1 small piece toast (chopped into chunks)
  • 1 ripe avocado (peeled, de-stoned, and roughly chopped)

  • 2 tsp sweet chili sauce
  • juice of half a lime
  • salt and pepper to taste

Instructions

  2. Prepare guacamole: In a mixing bowl, mash together the avocado, red onion, cilantro, lime juice, salt, and pepper until smooth.
  3. Assemble your bowl: Layer baby spinach at the bottom of a serving bowl. Top with guacamole, halved egg, red onion slices, toast chunks, sour cream dollop, sweet chili sauce drizzle, and black pepper.
