  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • 1 teaspoon vegetable oil
  • 4 slices turkey bacon (diced)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into 1-inch chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into 1-inch pieces)
  • Fresh parsley (for garnish)

Instructions

  1. Heat vegetable oil in a large Dutch oven over medium-high heat. Add diced turkey bacon and cook until crispy, about 4–5 minutes. Remove with a slotted spoon.
  2. Season the beef with salt and pepper, then brown in batches on all sides, about 1–2 minutes per side. Remove and set aside.
  3. Lower the heat to medium, add more oil if needed, and sauté onions until browned, around 5 minutes. Stir in minced garlic.
  4. Mix in flour and tomato paste; cook for another minute until darkened.
  5. Pour in beef broth while scraping up browned bits from the pot. Return reserved beef and turkey bacon to the pot along with brown sugar, seasoning, and thyme.
  6. Bring to a boil, then cover and reduce to a simmer for one hour.
  7. Add carrots and potatoes; cover again and simmer until tender, about another hour.
  8. If needed, increase heat to thicken the stew before serving. Adjust seasoning as necessary.
