  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a springform pan.
  2. In a bowl, combine grated carrots, flour, baking powder, cinnamon, nutmeg, and sugar; mix well.
  3. Add eggs one at a time and stir until blended.
  4. In another bowl, beat softened cream cheese until smooth; mix in sour cream until creamy.
  5. Layer half of the carrot cake batter in the pan, followed by half of the cheesecake mixture; repeat layers.
  6. Bake for 55-65 minutes until set but slightly jiggly in the center.
  7. Cool completely before refrigerating for at least four hours or overnight.
