  • 2 chicken breasts
  • 2 tsp olive oil (1 tsp for chicken)
  • Salt & black pepper to taste
  • tsp paprika
  • tsp garlic powder
  • 1 large sweet potato, sliced into rounds
  • 1 tsp olive oil (for potatoes)
  • Salt & optional spices
  • 2 cups broccoli florets

Instructions

  1. Preheat the oven to 200C (400F).
  2. Rub the chicken breasts with olive oil, salt, pepper, paprika, and garlic powder. Bake for 20-25 minutes or grill until fully cooked. Slice before storing in meal prep containers.
  3. Toss sweet potato rounds in olive oil and sprinkle with salt and optional spices if desired. Spread them out on a baking sheet. Roast in the oven for about 25 minutes, flipping halfway through until they are caramelized.
  4. Add broccoli florets to a steamer basket over boiling water. Steam for about 5-6 minutes until tender-crisp and vibrant in color.
  5. Divide all components evenly into two containers.
