- 6–8 tablespoons ice water
- 2 1/2 to 3 pounds fresh apricots (washed, pitted, and sliced into halves or quarters)
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional)
- 1 large egg (beaten)
- Coarse sugar (for sprinkling)
Instructions
- Prepare the pie crust by mixing flour, sugar, and salt in a bowl. Cut in shortening and butter until crumbly, then add ice water until dough forms. Chill for an hour.
- Preheat the oven to 375°F (190°C). Roll out one dough disc into a pie plate and set aside.
