Ingredients
- 2 cups fresh blueberries
- 3 tablespoons sugar
- 1.5 tablespoons corn starch
- Pinch salt
- 2 teaspoons fresh lemon juice
- 1 package of pre-made pie crust (2 in a pack)
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
- 3/4 cup powdered sugar (for drizzling)
- 1–2 tablespoons milk (for drizzling)
Instructions
- In a medium saucepan over medium heat, cook the blueberries until softened (about 9 minutes). Add sugar, cornstarch, and salt; stir until thickened (2-3 minutes). Remove from heat and stir in lemon juice. Allow to cool slightly.
- Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
- Roll out the pre-made pie crust and cut out 16 circles using a round cutter.
- Place half the circles on the baking sheet, add about 1 tablespoon of blueberry filling to each, then top with remaining circles. Crimp edges with a fork and make steam slits.
- Brush tops with egg wash made from whisking together egg and water.
- Bake for about 20 minutes until golden brown. Drizzle cooled icing made from powdered sugar and milk over pies before serving.
