Description

Ingredients

  • 2 cups fresh blueberries
  • 3 tablespoons sugar
  • 1.5 tablespoons corn starch
  • Pinch salt
  • 2 teaspoons fresh lemon juice
  • 1 package of pre-made pie crust (2 in a pack)
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 3/4 cup powdered sugar (for drizzling)
  • 12 tablespoons milk (for drizzling)

Instructions

  1. In a medium saucepan over medium heat, cook the blueberries until softened (about 9 minutes). Add sugar, cornstarch, and salt; stir until thickened (2-3 minutes). Remove from heat and stir in lemon juice. Allow to cool slightly.
  2. Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
  3. Roll out the pre-made pie crust and cut out 16 circles using a round cutter.
  4. Place half the circles on the baking sheet, add about 1 tablespoon of blueberry filling to each, then top with remaining circles. Crimp edges with a fork and make steam slits.
  5. Brush tops with egg wash made from whisking together egg and water.
  6. Bake for about 20 minutes until golden brown. Drizzle cooled icing made from powdered sugar and milk over pies before serving.
