  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Measure the heavy cream into a liquid measuring cup. Whisk in one large egg plus one egg yolk. Reserve the remaining egg white for brushing the scones. Chill this mixture in the freezer while you prepare the dry ingredients.
  3. In your food processor, combine the flour, sugar, baking powder, chai spices, and kosher salt. Pulse several times until mixed.
  4. Take the butter out of the freezer and add it to the flour mixture in the food processor. Pulse until some butter pieces are very small while others remain larger.
  5. Gradually pulse in the chilled cream and egg mixture until a ball forms that pulls away from the sides. The dough should feel slightly wet with visible butter pieces.
  6. Transfer your dough to a floured surface. Form it into a ball and flatten it into a disc. Wrap in plastic wrap and place in the freezer for about 30 minutes.
  7. Remove dough from freezer. Roll it out on a floured surface to about one inch thick for full-sized scones or half an inch thick for mini scones. Cut into wedges or strips as desired.
  8. Transfer your cut scones onto the prepared baking sheet. Brush generously with egg wash and bake for about 20–22 minutes until golden brown. Allow them to cool before glazing.
  9. While baking, whisk together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  10. Dip each cooled scone into the glaze until fully coated. For a thicker layer of glaze, allow it to set before coating again. Let glaze set for about ten minutes before serving.
