  • 1 lb orzo pasta
  • 1/2 lb kalamata olives
  • 12 oz sun-dried tomatoes (in oil)
  • 1 cup fresh spinach
  • 1/3 lb feta cheese
  • 3 tbsp fresh basil
  • 3 tbsp fresh mint
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • Zest from 1 lemon
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Boil 2 quarts of water in a large pot, add salt, and cook orzo until al dente (8–10 minutes). Drain and rinse under cold water.
  2. While cooling, chop olives, onion, spinach, basil, mint, and dice sun-dried tomatoes.
  3. In a mixing bowl, combine cooled orzo with chopped ingredients.
  4. Whisk together olive oil, lemon juice, zest, and crumbled feta in a separate bowl.
  5. Pour dressing over the salad mixture and toss gently to coat.
  6. Chill for at least 30 minutes before serving.
