- 1/2 lb kalamata olives
- 12 oz sun-dried tomatoes (in oil)
- 1 cup fresh spinach
- 1/3 lb feta cheese
- 3 tbsp fresh basil
- 3 tbsp fresh mint
- 3 tbsp extra-virgin olive oil
- 3 tbsp fresh lemon juice
- Zest from 1 lemon
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil 2 quarts of water in a large pot, add salt, and cook orzo until al dente (8–10 minutes). Drain and rinse under cold water.
- While cooling, chop olives, onion, spinach, basil, mint, and dice sun-dried tomatoes.
- In a mixing bowl, combine cooled orzo with chopped ingredients.
- Whisk together olive oil, lemon juice, zest, and crumbled feta in a separate bowl.
