Ingredients

  • 1 lb carrots, peeled and cut
  • 1 Tbsp avocado or olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • Salt and cracked black pepper to taste
  • Optional: ¼ cup crumbled goat cheese for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine sliced carrots with oil, balsamic vinegar, honey, garlic, thyme, salt, and pepper. Toss until evenly coated.
  3. Spread the coated carrots on the prepared baking sheet in a single layer.
  4. Roast for 20-25 minutes or until tender, brushing with reserved glaze during the last 5 minutes.
  5. Drizzle remaining glaze over roasted carrots before serving. Add crumbled goat cheese if desired.
