Ingredients
- 1 fully cooked bone-in spiral chicken (8 lbs)
- 1 orange, sliced
- 1 cup orange juice
- 1 cup dark brown sugar
- 1 cup honey
- ½ cup orange marmalade
- ¼ cup Dijon mustard
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ½ tsp Bayou City Lemon Pepper
- ½ tsp cloves
- 1 tsp salt
Instructions
- Preheat oven to 350°F.
- Layer orange slices in a roasting pan and pour orange juice over them.
- Place the roasting rack in the pan and set the chicken on top.
- In a saucepan, combine brown sugar, honey, orange marmalade, and salt; simmer for about 4 minutes.
- Pour half of the glaze over the chicken and bake uncovered for 50 minutes.
- Add remaining glaze and bake for an additional 20 minutes until internal temperature reaches 140°F.
