  • 1 to 2 lbs chicken wings
  • 1 tablespoon soy sauce
  • 1/4 cup cooking sake (or rice vinegar)
  • 1/2 tablespoon sesame oil
  • 1 scallion (cut into strips)
  • 3 dashes black pepper powder
  • 2 inches ginger (peeled and coarsely diced)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (for glaze)
  • 1 tablespoon mirin
  • white sesame seeds (for garnish)

Instructions

  1. Clean and pat dry the chicken wings.
  2. In a mixing bowl, combine soy sauce, cooking sake, sesame oil, scallions, black pepper, and ginger. Add chicken wings and marinate for at least 30 minutes.
  3. For the glaze, combine honey, soy sauce, mirin, and cooking sake in a saucepan over low heat until thickened.
  4. Preheat oven to 400°F (207°C) and line a baking sheet with parchment paper.
  5. Arrange marinated wings on the baking sheet and bake for 10 minutes.
  6. Brush half of the glaze over the wings and bake for another 10 minutes.
  7. Brush remaining glaze on wings and bake for an additional 10-12 minutes until browned.
  8. Garnish with white sesame seeds before serving.
