- 2–3 medium-sized apples
- 3 tablespoons unsalted butter (divided, melted, and cooled)
- 2 tablespoons lemon juice (freshly squeezed)
- ¼ teaspoon salt
- 3 tablespoons apricot preserves
- 1 tablespoon coconut sugar
- ½ teaspoon ground cinnamon (divided)
- Pinch of ground nutmeg
- 1 sheet puff pastry (9 1/2 by 9-inch, defrosted overnight in the fridge)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Core and thinly slice apples (about ⅛-inch thick). Toss with melted butter, lemon juice, and salt.
- Spread apple slices on the baking sheet and bake for about 10 minutes until softened.
- Meanwhile, grease a muffin pan with melted butter and mix coconut sugar with remaining spices.
- Roll out puff pastry to a rectangle (12×10 inches), brush with apricot preserves, and sprinkle with the coconut sugar mixture.
- Cut pastry into six strips (10×2 inches). Place overlapping apple slices along one edge of each strip.
- Fold the bottom inch of dough over the apples, then roll into a pinwheel shape and place in the muffin pan.
- Bake for 40-45 minutes until golden brown; let cool before serving.
