  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the overripe bananas until you have 2 1/4 cups.
  2. In a large bowl, mix together flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together the butter and both sugars. Add cinnamon, beaten eggs, vanilla extract, and mashed bananas; stir until combined.
  4. Gently fold the banana mixture into the dry ingredients until just combined.
  5. Pour into a greased 6-inch round cake pan.
  6. Place a trivet in the Instant Pot with 1 cup of water and insert the pan.
  7. Cover the pan with foil and seal the Instant Pot lid; cook on manual mode for 50 minutes followed by a quick release.
  8. Let cool on a wire rack before slicing.
