- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 3 large eggs, room temperature
- 2 cups mixed berries (fresh or frozen), thawed if frozen
Instructions
- Preheat oven to 325°F (160°C) and line an 8-inch square baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of the prepared pan. Bake for 10 minutes until golden.
- In a mixing bowl, beat cream cheese and sugar until smooth; add vanilla and then eggs one at a time, mixing until just combined.
- In a small saucepan, heat mixed berries with 1 tablespoon sugar until juices are released (about 5 minutes). Cool slightly.
- Pour half of the cheesecake filling over the crust. Add dollops of berry mixture and swirl gently; pour remaining filling on top with more berry swirls.
- Bake for 40-45 minutes until set but slightly jiggly in the center. Allow to cool completely before refrigerating for at least four hours or overnight.
