  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fettuccine pasta
  • 8 oz fresh mushrooms (button or cremini)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook fettuccine in salted boiling water according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and slice into strips.
  3. In the same skillet, sauté sliced mushrooms and minced garlic until browned (about 5 minutes).
  4. Pour in heavy cream and scrape up browned bits from the skillet. Gradually add Parmesan cheese, stirring until melted and creamy; adjust thickness with reserved pasta water if needed.
  5. Toss cooked fettuccine and sliced chicken into the sauce until evenly coated.
  6. Serve hot, garnished with extra Parmesan and fresh herbs if desired.
