- 1.5 cups low-sodium chicken broth
- 8 oz sushi-grade fresh tuna, diced
- 2 tbsp sriracha sauce
- 2 tbsp mayonnaise (Japanese mayo preferred)
- 2 tbsp green onions, finely chopped
- 1 tsp sesame oil
- Vegetable oil for frying
- 1 avocado, sliced for serving
- Microgreens for garnish
Instructions
- Rinse sushi rice until water runs clear. Cook in chicken broth over medium heat until absorbed, about 15 minutes.
- Transfer cooked rice to a greased baking dish, pressing down firmly to create a one-inch layer. Chill in the fridge for at least one hour.
- Once firm, cut rice into two-inch squares.
- Heat vegetable oil in a non-stick skillet over medium-high heat and fry rice squares until golden brown on each side (about three minutes per side). Drain on paper towels.
- In a bowl, mix diced tuna with sriracha, mayonnaise, green onions, and sesame oil.
- Top each crispy rice square with the spicy tuna mixture and garnish with avocado slices and microgreens before serving.
