  • 4 tbsp unsalted butter, melted
  • 12 oz cream cheese, softened
  • ½ cup granulated sugar

  • 1 cup heavy whipping cream

  • Red food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine crushed graham crackers and melted butter. Press mixture into mini cupcake liners or greased muffin tins. Bake for 8 minutes until golden brown.
  2. In another bowl, beat cream cheese and sugar until smooth. Add vanilla and peppermint extracts; mix well. Optionally, stir in red food coloring.
  3. Whip heavy cream in a separate bowl until soft peaks form; gently fold into the cream cheese mixture.
  4. Spoon filling into cooled crusts and refrigerate for at least 2 hours until set.
