  • 1 medium green bell pepper, diced
  • 1 medium yellow onion, diced
  • 8 oz fresh mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 8 oz cream cheese, softened
  • 2 cups shredded cheese blend (provolone and mozzarella)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add olive oil; sauté onion, green bell pepper, and mushrooms until softened (about 5 minutes). Stir in minced garlic for an additional minute.
  3. Add ground beef to the skillet; cook until browned. Drain excess fat and stir in beef broth; simmer for five minutes.
  4. In a separate bowl, mix softened cream cheese with half of the shredded cheese until smooth.
  5. Layer the beef mixture in the prepared baking dish; dollop cream cheese mixture on top, spreading gently.
  6. Sprinkle remaining shredded cheese over the top. Bake for 25-30 minutes or until bubbly and golden brown.
