  • 1 cup fresh baby spinach, rinsed
  • ½ cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  3. Place one salmon fillet on a cutting board; spread filling evenly on top. Roll from one end to another and secure with toothpicks if necessary.

  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until salmon flakes easily with a fork.
