  • 1 package puff pastry
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 8 oz cremini mushrooms
  • 1 tbsp fresh thyme
  • Salt and black pepper to taste
  • 8 oz cream cheese
  • 1/2 cup Parmesan cheese
  • 1 cup Gruyère cheese
  • 1 large egg (or cream/milk for brushing)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt unsalted butter and olive oil. Sauté chopped onion and minced garlic until translucent.
  3. Add sliced mushrooms, thyme, salt, and pepper; cook until tender. Remove from heat.
  4. In a bowl, mix cream cheese, Parmesan, Gruyère cheese, and optional Dijon mustard. Fold in sautéed mushroom mixture.
  5. Roll out the puff pastry into a rectangle; cut slits along both sides for braiding.
  6. Spoon the filling into the center of the pastry and braid by folding strips over alternately.
  7. Brush with egg wash and bake for 20–22 minutes until golden brown.
  8. Let cool slightly before slicing; garnish with fresh parsley.
