  • 8 oz jar oil-packed sun-dried tomatoes
  • 1 large onion
  • 3 large carrots
  • 2 stalks celery
  • 5 cloves garlic
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 2 Tbsp tomato paste
  • 1 Tbsp chicken base
  • 2 ½ Tbsp flour
  • 5 cups chicken broth
  • 12 oz can evaporated milk
  • 2 cups cooked chicken
  • 34 oz baby spinach
  • 1 pound shelf-stable gnocchi

Instructions

  1. In a large pot over medium heat, warm the reserved oil from the sun-dried tomatoes. Sauté diced onion, carrots, and celery for about 5 minutes until softened.
  2. Stir in chopped sun-dried tomatoes, minced garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Sauté until fragrant.
  3. Add tomato paste and flour; stir for about 1 minute.
  4. Pour in chicken broth while scraping the pot's bottom. Bring to a simmer and reduce heat to low for 15 minutes.
  5. Incorporate shredded chicken, spinach, evaporated milk, and gnocchi; cook for an additional 5–10 minutes until heated through.
  6. Serve hot with grated parmesan cheese on top.
