Description

Italian Sausage Pasta Soup is a heartwarming dish that combines creamy goodness with vibrant vegetables and tender pasta, making it the perfect comfort food for any occasion.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken sausage
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons unsalted butter
  • 2 cups finely diced yellow onion (1 large onion)
  • 2 cups finely diced carrots (45 carrots)
  • 1 tablespoon minced garlic
  • 2 tablespoons flour
  • 71/2 cups chicken broth
  • 2 cups mini bowtie pasta
  • 11/2 cups heavy cream
  • 21/2 packed cups finely chopped kale
  • 1/2 cup sun-dried tomatoes (finely chopped)
  • 1/2 packed cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over high heat. Add ground chicken sausage, season with salt and pepper, and cook until browned. Remove and set aside.
  2. Lower the heat to medium, add butter, onions, carrots, and garlic to the pot. Sauté until tender.
  3. Sprinkle flour over the sautéed vegetables, cook for another minute while stirring.
  4. Gradually whisk in chicken broth until smooth; bring to a boil.
  5. Add mini bowtie pasta and cook according to package instructions minus one minute.
  6. Reduce heat to low; stir in heavy cream, kale, sun-dried tomatoes, and return cooked sausage to the pot. Mix well.
  7. Serve hot with optional grated Parmesan cheese.
