- 1 tablespoon olive oil
- 1 pound ground chicken sausage
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons unsalted butter
- 2 cups finely diced yellow onion (1 large onion)
- 2 cups finely diced carrots (4–5 carrots)
- 1 tablespoon minced garlic
- 2 tablespoons flour
- 7–1/2 cups chicken broth
- 2 cups mini bowtie pasta
- 1–1/2 cups heavy cream
- 2–1/2 packed cups finely chopped kale
- 1/2 cup sun-dried tomatoes (finely chopped)
- 1/2 packed cup grated Parmesan cheese (optional)
Instructions
- In a large pot, heat olive oil over high heat. Add ground chicken sausage, season with salt and pepper, and cook until browned. Remove and set aside.
- Lower the heat to medium, add butter, onions, carrots, and garlic to the pot. Sauté until tender.
- Sprinkle flour over the sautéed vegetables, cook for another minute while stirring.
- Gradually whisk in chicken broth until smooth; bring to a boil.
- Add mini bowtie pasta and cook according to package instructions minus one minute.
- Reduce heat to low; stir in heavy cream, kale, sun-dried tomatoes, and return cooked sausage to the pot. Mix well.
- Serve hot with optional grated Parmesan cheese.
