  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons dry ranch seasoning mix
  • 2 teaspoons pepper
  • ½ cup ranch dressing
  • ½ cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • ¼ teaspoon black pepper
  • 1 small red onion
  • 8 pieces turkey bacon
  • 2 medium jalapeno peppers
  • 1 cup sharp cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix cubed red potatoes with olive oil and ranch seasoning until well-coated.
  3. Spread the potatoes on a lined baking sheet and roast for 30-35 minutes until golden brown.
  4. While they roast, whisk together ranch dressing, mayonnaise, apple cider vinegar, and black pepper in another bowl.
  5. Once roasted, let the potatoes cool slightly before combining with dressing, diced onion, turkey bacon, jalapenos, and shredded cheese.
  6. Chill in the refrigerator for at least 30 minutes before serving.
