  • 1.5 lb beef oxtail
  • 3 garlic cloves (minced)
  • 1 tsp allspice
  • 1 tbsp tomato paste
  • 4 sprigs thyme
  • 1 medium onion (chopped)
  • 2 tomatoes (diced)
  • 16 oz butter beans (rinsed)
  • 1 cup baby carrots (chopped)
  • 3 cups water
  • 1 tbsp cooking oil
  • 23 bay leaves
  • 1 tbsp brown sugar
  • Pinch of salt
  • 2 tsp chicken bouillon (or beef, vegetable bouillon)
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1/2 red bell pepper (diced)
  • 1/2 green bell pepper (diced)
  • 2 green onions (sliced)
  • 23 tbsp cornstarch (mixed with water for thickening)

Instructions

  1. Rinse the oxtail with water and lemon juice; trim excess fat and pat dry.
  2. In a mixing bowl, combine all ingredients and marinate for at least 30 minutes.
  3. Set the instant pot to sauté; add oil and sear oxtail until browned on all sides.
  4. Remove oxtail; sauté onions, tomatoes, and bell peppers in the same pot until softened.
  5. Return oxtail to the pot with water and bay leaves; cook on high pressure for 20 minutes.
  6. After natural release, stir in green onions, butter beans, and carrots; mix cornstarch with water and add to thicken sauce.
  7. Simmer for an additional 5 minutes before serving hot.
