  • 1 cup crushed buttery crackers
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp black pepper
  • 1 tsp chopped thyme
  • 8 tbsp melted butter
  • 2 tbsp olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, sliced
  • 2 cups Brussels sprouts, quartered
  • 2 cups cremini mushrooms, quartered
  • 3 carrots, sliced
  • 1 tsp chopped thyme
  • Salt and pepper
  • 2 tbsp all-purpose flour
  • 1 cup broth
  • 1/3 cup heavy cream
  • 1/2 cup shredded Gruyere cheese

Instructions

  1. Preheat the oven to 350°F. Butter a 9-inch deep pie dish.
  2. In a bowl, mix crushed crackers, panko, Parmesan, black pepper, thyme, and melted butter. Press half into the pie dish and bake for about 12 minutes until golden.
  3. Sauté diced onion in olive oil over medium heat for 5 minutes; add garlic and vegetables. Cook until caramelized.
  4. Sprinkle flour over veggies and stir in broth gradually until thickened; add heavy cream.
  5. Pour mixture into baked crust; top with Gruyere cheese and remaining crumble mixture. Bake for an additional 15 minutes until bubbly.
  6. Cool for 15 minutes before serving.
