  • 3 Yukon gold potatoes
  • 2 cloves garlic
  • 1 tbsp butter
  • 5 cups water or stock
  • 1 lb cubed beef (or alternative protein)
  • 8 oz Japanese curry roux
  • 1 tbsp Worcestershire sauce (or alternative)
  • 1 tbsp ketchup
  • 1 tbsp honey
  • 1 red apple (Fuji or Honeycrisp)
  • 8 cups medium grain white rice

Instructions

  1. Prepare the vegetables: Chop potatoes, carrots, and onions into chunks; mince garlic and grate the apple.
  2. Soak potato chunks in warm water for about 15 minutes to reduce starch.
  3. Season cubed beef with salt, allowing it to rest for about 10 minutes.
  4. Sear beef in a large pot with cooking oil until browned; set aside.
  5. Sauté onions in butter until caramelized, then add minced garlic and cook briefly.
  6. Stir in soaked potatoes and carrots; return the seared beef to the pot.
  7. Pour in water or stock; add grated apple, honey, ketchup, and Worcestershire sauce if using.
  8. Simmer covered on medium-low heat for about 15 minutes, stirring occasionally.
  9. Add curry roux dissolved in broth; stir until fully incorporated.
  10. Let simmer uncovered for another 15 minutes until thickened.
  11. Serve hot over rice.
